Preparation
  • Thoroughly wash the lentils. Place in a pot and add 5 glasses of water. Bring to a boil and then lower the heat to a simmer.
  • Mix in onions, tomato sauce, olive oil and spices.
  • Cook over low heat for an hour and a half.
  • Pour into soup bowls and enjoy. Makes almost 8 servings.

IngredientsSwiss Chard Lentil Soup
  • 1 large onion, cut into thin pieces
  • 2 lbs Swiss chard
  • 1 liter of water
  • 1 big potato, peeled and diced
  • 2 lemons, squeezed
  • 1/2 lb green lentils
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 tablespoons of extra virgin olive oil
  • 1 medium lemon, squeezed
Preparation
  • Separate the Swiss chard leaves from stems.
  • Cut the leaves into medium shreds.
  • Cut stems into small pieces.
  • On the side, fry the onions in olive oil.
  • Boil the lentils in water but only until half cooked.
  • Add the fried onion, chard, potato, salt and pepper.
  • Cover and cook for 20 minutes.
  • By the 18th minute, add the lemon juice and cook for another 2 minutes.
  • Serve hot.
