Preparation
- Thoroughly wash the lentils. Place in a pot and add 5 glasses of water. Bring to a boil and then lower the heat to a simmer.
- Mix in onions, tomato sauce, olive oil and spices.
- Cook over low heat for an hour and a half.
- Pour into soup bowls and enjoy. Makes almost 8 servings.

Ingredients

- 1 large onion, cut into thin pieces
- 2 lbs Swiss chard
- 1 liter of water
- 1 big potato, peeled and diced
- 2 lemons, squeezed
- 1/2 lb green lentils
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 tablespoons of extra virgin olive oil
- 1 medium lemon, squeezed
Preparation
- Separate the Swiss chard leaves from stems.
- Cut the leaves into medium shreds.
- Cut stems into small pieces.
- On the side, fry the onions in olive oil.
- Boil the lentils in water but only until half cooked.
- Add the fried onion, chard, potato, salt and pepper.
- Cover and cook for 20 minutes.
- By the 18th minute, add the lemon juice and cook for another 2 minutes.
- Serve hot.
