Ingredients

- 2 cans of garbanzo beans
- 1.5 cups of black olives with zaatar
- 2 cups of cherry tomatoes
- 1/2 cup chopped basil
- 4 tablespoons of extra virgin gourmet olive oil
- 2.5 tablespoons of lemon juice
- black pepper to taste
- salt to taste
Preparation
- Empty the two cans of garbanzo beans into a salad bowl.
- In a separate smaller bowl, take out the olive pits by using a cherry pitter.
- Add the pitted black olives to the garbanzo beans in the salad bowl.
- Cut the cherry tomatoes horizontally in half and add them to the mixtures.
- Add the basil, lemon, olive oil, salt and pepper. Mix everything together.
- Let the salad rest for 20 minutes before serving, allowing enough time for the different aromas to blend with one another.
